Avocado Seafood Supreme
One tablespoon butter
¾ cup chopped celery
½ cup chopped green onion
1 ½ pounds seafood (crab, lobster, shrimp, fish or a mix)
Saute celery and onion in butter over low heat until soft, but not browned.
Cut seafood into bite size pieces
Stir into celery and onion and heat until warmed through.
Remove from heat and fold in:
½ cup mayonnaise blended with
½ cup dairy sour cream
1 teaspoon curry powder
Dash of Tabasco and 1 teaspoon worcestshire sauce
Divide among 6 avocado halves
Sprinkle with grated parmesan cheese
Put under broiler for several minutes until cheese melts.
Serve on bed of fluffy buttered rice
