Jim’s Steak & Vegetable Soup
In a large pot add the following:
5 to 6 tablespoons of olive oil
1 pound of round or sirloin steak, browned and cubed
1 can Campbell’s Tomato soup
1 jar (10-12 ounce) Heinz brown gravy
2 12 – 14 ounce cans clear vegetable broth
2 1 pound bags of frozen soup vegetables
2 large onions, diced
2 large potatoes, diced
½ pound carrots, diced
3 tablespoons of salt
1 teaspoon celery seed
3 tablespoons garlic powder
1 tablespoon red pepper
1 tablespoon cumin
1 tablespoon curry
1 tablespoon dry mustard
4 cups water
Brown meat in olive oil, drain, chop/cube and return to pan. Add soup, gravy and broth first, then all other ingredients, finishing with four cups of water. Cover, bring to boil, reduce heat and simmer 2 hours. Makes 3 gallons.
